It's post boxing day and you still have leftovers?
This is a wonderful recipe to use up any meat but especially good with ham or turkey. My family loves it. It's savoury and tasty and you can add less or more cheese to it and a crunchy bread crumb topping to make it extra crispy. A great way to use up your left overs from the holiday and super simple to assemble and cook. It Serves 4 What you will need: Soup can of any creamed soup ( ie. mushroom. celery, cream of chicken) Soup can of left over vegetables or frozen mixed vegetables (any kind) Soup can of rice 4 cheese slices (processed or 1/2 cup shredded cheese) 1 and 1/2 soup cans of water Soup can of left over ham, turkey or meat of your choice **Optional toppings- extra grated cheese for topping or 1/2 cup seasoned bread crumbs (or crouton or stuffing) mixed with 2 tbsp melted butter** Oil to brush on your medium sized casserole dish - 1 tbsp to coat How to make it: Pre heat oven to 350 Degrees Brush oil on the inside of your casserole dish Mix all ingredients (except toppings) together in a separate bowl Pour ingredients into casserole dish Top with toppings Bake for 45 minutes to one hour until rice is tender and casserole has absorbed liquid and toppings are browned. Serve with a fresh tossed salad, left over cranberry sauce. Enjoy! Have a lovely Sunday :)
